Cuisine in the Philippines

Traditional Filipino cuisine has been shaped for centuries and has its own unique Asian flavor. It is a special cuisine, unlike the cuisines of other nearby countries, with a touch of Spanish and Chinese traditions, but it has not lost its traditions. It's both simple and shocking.

Typical of all Filipino cuisine is the use of rice as a side dish. Here it is boiled, fried, steamed, added to soup, and even made into desserts. Rice makes up almost two thirds of the typical Filipino's diet. The variety of varieties that can be found in the markets is simply amazing: white, brown, red, and black. At the same time, each type of rice has its own varieties. In ordinary cafes, rice is boiled in water without salt and served in a separate portion.

Noodles of various varieties are considered equally popular: from rice to egg noodles. It, like rice, is served as a separate dish or side dish, and noodle soups are often cooked.

Meat from which Filipinos traditionally prepare food: pork, chicken, buffalo meat. Unlike other Asian countries, such as Thailand, Filipinos are used to cooking non-spicy dishes adapted to the European stomach. Traditional dishes have a sweet and sour taste.

The Philippines is a paradise for fish and seafood lovers. The variety of fish is amazing. There are river fish, sea fish, and ocean fish. And one variety of king perch is named after the national hero of the Lapu Lapu Island chief. In restaurants, you can often find a dish of this fish on the menu.

Colonized by Spain, the country joined the practice of eating with a spoon and fork several centuries ago, but in some cafes it is still customary to bring food on a lightly fried banana leaf and bring food to your mouth with your hands.

The traditional cuisine available to tourists in restaurants is very different from what you will be served in a cafe, and what is served in a cafe is different from what can be found in mobile kitchens.

The restaurant's menu offers the best dishes of traditional Filipino cuisine. But the fact is that Filipinos themselves rarely eat such food. The low income level in the country is not suitable for daily consumption of as much meat as is required in a serving. Of the popular restaurant dishes typical of traditional cuisine:

Lechon — whole roast pig;

"Crispi pata" — pork leg cooked according to local recipes;

"Ritafel" — spicy chicken in sweet and sour sauce;

Calderetto — stew of vegetables and beef;

Morcon — meat loaf;

Pankimoto is a casserole made from pork, mushrooms and chicken.

In a cafe, everything is much simpler in terms of diet. Here, from traditional dishes, ready—made portions are served: "longsilog" — spicy sweet sausages with vegetables, "tosilog" — pork or chicken with vegetables, "tapsilog" - a piece of beef, fried eggs and vegetables. Boiled rice is added to each serving.

In front of all this splendor of dishes there are "mobile" cafes. Literally at every step along the roadway there are wooden tents in which soups, kebabs, rice, and stewed vegetables are prepared on site. The peculiarity of these dishes is that they use everything that is not used in a normal kitchen. For example, chicken intestines can be offered as a barbecue on a skewer, anything the cook finds can float in the soup, and the main dish may turn out to be, at best, fried in flakes, chicken phalanx, at worst, "balut" — an egg with a duckling embryo in its own juice.
